Polidoro has a 4 hectare plot on the Huabal region, near the village of Flor del Norte. He grows catimor, caturra and typica at an altitude of 1884 m. On its 4 hectares, 1.5 are dedicated to coffee and the rest in diversified cultivation. This multi varietal microlot was dry fermented for 15 to 25 hours and dried for 15 days on African beds.



The Polidoro plot is called Romerillo because it is a tree that grows in abundance in this area and which provides shade to the coffee trees. Polidoro has been associated with Coopagro for three years, he chose to work with them because their way of working goes hand in hand with his ideals. He bets a lot on quality to have a coffee that improves each season, develops its aromas and flavors. It favors an environment-friendly system. “From the moment you choose to work the land, you do everything to avoid an environmental imbalance. When I understood this, I grew up and I now have organic and fair trade certifications. This year, we will put in place African beds for drying and we are always working to be better every day.
