About Anderleis’ Finca La Palma in El Paraiso
La Palma is a 1 hectare farm on which Anderleis cultivates only coffee. It sits 1800 meters high in the Cajamarca province. This microlot was produced at the very end of the harvest. Since the farm is not too large, Anderleis manages to complete the entire harvest with help from his family. It all starts with a careful selection of only ripe cherries. Unripe cherries are left on the tree. Next, he will pulp the cherries on the eco-friendly depulping machine. It removes most of the mucilage with friction, greatly reducing the use of water. After this, the coffee dry ferments in a pile for 18 hours. Once fermentation is complete, the coffee is put in buckets of water for a quick wash. Finally, the coffee dries on the patio for 10 days. In this time, Anderleis accumulates enough coffee to send a truck to the cooperative to sell his coffee.
